Ingenting tar mig tillbaka till New Orleans som en rostbiff, klädd och en old school italiensk sallad. Ingen av dessa är en del av vad de flesta tycker om när man äter "New Orleans-mat". Sanningen att säga att jag aldrig hade svartnat förrän jag lämnade New Orleans, det är strängt turistmat, precis som vi inte går runt med mardi gras-pärlor hela tiden.

Ingredienserna kommer från vänner och grannar. En stor poboy kan hittas i en restaurang, en bar, ett hem eller till och med en livsmedelsbutik. Vid andra raden kommer vi inte att försöka sätta snurren på poboys eller skaldjursplattor eller någon av maten vi erbjuder (en poboys undergång är när den är gussied up), vad vi kommer att göra är att sätta samma passion i varje bit och gör autentiskt varje maträtt som går ut.
