Ingenting tar mig tillbaka till New Orleans som en rostbiff, klÀdd och en old school italiensk sallad. Ingen av dessa Àr en del av vad de flesta tycker om nÀr man Àter "New Orleans-mat". Sanningen att sÀga att jag aldrig hade svartnat förrÀn jag lÀmnade New Orleans, det Àr strÀngt turistmat, precis som vi inte gÄr runt med mardi gras-pÀrlor hela tiden.

Ingredienserna kommer frÄn vÀnner och grannar. En stor poboy kan hittas i en restaurang, en bar, ett hem eller till och med en livsmedelsbutik. Vid andra raden kommer vi inte att försöka sÀtta snurren pÄ poboys eller skaldjursplattor eller nÄgon av maten vi erbjuder (en poboys undergÄng Àr nÀr den Àr gussied up), vad vi kommer att göra Àr att sÀtta samma passion i varje bit och gör autentiskt varje matrÀtt som gÄr ut.
